- 70g couscous
- 🐙 100g boiled octopus
- 1 can (190g) mackerel in water
- 🍅 1/2 tomato (100g)
- 1/2 yellow bell pepper (75g)
- 🧅 1/4 onion (50g)
- 🍄 3 mushrooms
- 3 seedless black olives
- 5 sprigs parsley
Couscous Preparation
- 100cc hot water
- 1 tbsp olive oil
- 🧂 1 pinch salt
Dressing
- 🍋 1 tbsp lemon juice
- 🧂 1/3 tsp salt
- A pinch of pepper
- 1/2 tsp grated ginger
- 1/2 tsp grated garlic
- 1 tbsp olive oil
ÉTAPES
Prepare the couscous by mixing it with hot water, olive oil, and a pinch of salt. Cover and let it sit for 5 minutes, then fluff with a fork.
Chop the boiled octopus, tomato, yellow bell pepper, onion, mushrooms, and parsley into small pieces.
Mix the dressing ingredients: lemon juice, salt, pepper, grated ginger, grated garlic, and olive oil.
Combine the couscous, chopped vegetables, octopus, mackerel, and dressing in a large bowl. Mix well.
Garnish with parsley and serve chilled or at room temperature.
