- 200g grated daikon
- 2 shiso leaves

- 2 tbsp ponzu sauce
Preparation
- 2 tbsp potato starch
ÉTAPES
Grate the daikon and lightly squeeze out excess water. Trim the stems off the shiso leaves.
In a bowl, mix the oysters with potato starch. Add water and gently wash the oysters, replacing the water until it runs clear. Drain the oysters.
Boil water in a pot, add the oysters, and cook for 2–3 minutes after the water returns to a boil. Drain the oysters.
Arrange the shiso leaves and grated daikon on a plate. Place the oysters on top and drizzle with ponzu sauce.
