- 1 pack pea sprouts
- 🥑 1/2 avocado
- 🍅 6 cherry tomatoes
Dressing
- 🍋 2 tbsp lemon juice
- 3 tbsp mayonnaise
- 🍬 1/2 tsp sugar
- 🧂 1/2 tsp salt
- to taste black pepper
ÉTAPES
Trim the roots off the pea sprouts and cut them into thirds. Peel and dice the avocado into 2cm cubes.
Remove the stems from the cherry tomatoes and cut them in half.
In a bowl, mix the dressing ingredients (lemon juice, mayonnaise, sugar, salt, and pepper). Add the pea sprouts and avocado, then toss to combine.
Plate the salad and top with the cherry tomatoes. Serve immediately.
