INGRÉDIENTS
Protein
- 100g pork slices
Vegetables
- 1 piece (200g) atsuage
- 125g pea shoots
Cooking Oil
- 1/2 tbsp salad oil
Seasoning
- 1/2 tbsp sake
- 1 tsp soy sauce
- 1/2 tsp grated ginger
- 3 tbsp potato starch
Sauce
- 1 tbsp mirin
- 1 tsp sugar
- 1 tbsp soy sauce
- 1 tbsp mayonnaise
ÉTAPES
In a bowl, add pork slices and crumble atsuage. Mix with sake, soy sauce, grated ginger, and potato starch while mashing the atsuage. Form into bite-sized balls.
Heat salad oil in a frying pan over medium heat. Place the balls in the pan and cook for about 5 minutes, turning until crispy and cooked through.
Add the sauce ingredients (mirin, sugar, soy sauce, mayonnaise) to the pan and stir until glossy. Cut pea shoots with kitchen scissors and add to the pan. Stir-fry until softened.
