INGRÉDIENTS
Rice
- 🍚 2 bowls (400g) cooked white rice
Meat
- 🐖 100g thinly sliced pork
Vegetables
- 🍶 150g silken tofu
- 1/3 bunch garlic chives
- 🧅 Chopped green onion, as needed
- 🧄 1 clove minced garlic
- 1 piece minced ginger
Oils and Sauces
- 1 tbsp salad oil
- 1 tsp doubanjiang
- 1 tsp tianmianjiang
- 2 tsp sesame oil
Seasonings
- 1 tbsp sake
- 🧂 1 tbsp soy sauce
- 1/2 tsp chicken stock powder
- 💧 150ml water
Thickener
- 💧 1 tbsp water
- 1/2 tbsp cornstarch
ÉTAPES
Cut garlic chives into bite-sized pieces. Mince garlic and ginger.
Heat salad oil in a frying pan. Add pork, garlic, and ginger, and stir-fry until the pork changes color. Add doubanjiang and tianmianjiang, and mix well.
Add the seasoning ingredients (sake, soy sauce, chicken stock powder, water) and cover the pan. Simmer on low heat for 5 minutes. Add garlic chives and hand-torn silken tofu, and simmer for another 2–3 minutes.
Add the cornstarch mixture to thicken the sauce. Drizzle sesame oil over the dish.
Serve warm rice in bowls, top with the mapo mixture, and garnish with chopped green onions.
