Break maitake mushrooms into bite-sized pieces. Cut bok choy into 3cm pieces, separating stems and leaves.

Heat sesame oil in a frying pan over medium heat. Add pork, grated garlic, and grated ginger, and stir-fry.

Once the pork changes color, add maitake mushrooms and bok choy stems. Stir-fry until coated with oil.

Add the seasoning mixture (sake, sugar, soy sauce, doubanjiang, chicken stock powder, and water) and mix. Cook for 2–3 minutes over medium heat. Add bok choy leaves and stir-fry.
