Meat
- 200g thinly sliced pork loin
Vegetables
- 10 shishito peppers
- 1 piece of ginger
Seasoning
- 1 tbsp sake
- 1 tsp soy sauce
- 1 tbsp cornstarch
- Enough salad oil for frying
Nanban Marinade
- 1 tbsp sugar
- 2 tbsp vinegar
- 2 tbsp soy sauce
- 4 tbsp water
ÉTAPES
Cut the pork into thirds. Mix sake, soy sauce, and pork in a bowl, marinate for 10 minutes.
Trim the tops of the shishito peppers and make a vertical slit. Slice the ginger into thin strips.
Mix sugar, vinegar, soy sauce, water, and ginger in a bowl to prepare the Nanban marinade.
Add cornstarch to the marinated pork and mix well.
Heat salad oil to 170°C in a pot. Fry the shishito peppers for about 1 minute, then transfer them to the Nanban marinade. Fry the pork pieces until cooked through, about 4–5 minutes, then transfer them to the marinade. Let everything soak for 15 minutes.
