- 8 slices pork belly (240g)

- 80g enoki mushrooms

- Potato starch as needed
- 1 ume plum
- 1 tbsp salad oil
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 1.5 tbsp ponzu sauce
ÉTAPES
Prepare the okra by trimming the ends and removing the calyx. Rub with salt (1/2 tsp) on a cutting board, rinse with water, and pat dry. Trim the enoki mushrooms and mash the ume plum into a paste.
Lay out a slice of pork belly, place an okra and 1/8 portion of enoki mushrooms at one end, and roll tightly. Repeat for all 8 rolls. Lightly coat with potato starch.
Mix the mashed ume plum with sake, mirin, and ponzu sauce in a bowl to create the ume ponzu sauce.
Heat salad oil in a frying pan and add the pork rolls. Cook for 2–3 minutes, turning to brown evenly. Cover and steam on low heat for 2 minutes.
Add the ume ponzu sauce to the pan and stir-fry until the rolls are evenly coated.
