Main Ingredients
- 🌭 4 sausages
- 🥔 2 potatoes (300g)
- 1/2 red bell pepper
- 🥚 2 eggs
- 1 tbsp olive oil
- A pinch of dried parsley
Seasonings
- 🧂 1/3 tsp salt
- A pinch of pepper
- 1/2 tsp consomme
ÉTAPES
Cut the potatoes into 7mm thick sticks, soak them in water for 5 minutes, and drain. Place them in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3 minutes. Drain the water. Slice the red bell pepper into 7mm wide strips.
Slice the sausages diagonally into 5mm thick pieces.
Crack the eggs into a bowl and whisk to create an egg mixture.
Heat olive oil in a frying pan over medium heat. Add the potatoes, red bell pepper, and sausages. Stir-fry for about 2 minutes until the sausages are browned.
Pour the egg mixture into the pan. Once the eggs are semi-cooked, stir gently to scramble and cook through. Add the seasonings (salt, pepper, consomme) and mix well.
Transfer to a serving plate and sprinkle with dried parsley.
