    • 🧂 1/4 tsp salt
    • Pinch of pepper
    • Enough all-purpose flour for dusting

Dice the potato into 2cm cubes, soak in water for 5 minutes, and drain. Microwave with 1 tbsp water for 4 minutes at 600W until soft. Mash the potato, mix with salt, pepper, and heavy cream, and microwave for 1 minute. Add cheese, mix, and let cool.

Place the chicken breast skin-side up and slice horizontally to open it. Cover with plastic wrap and pound to even thickness.

Season the inside of the chicken with salt and pepper, dust with flour, and place the potato cream mixture inside. Wrap the chicken around the filling, season the outside, and dust with flour.

Heat salad oil and butter in a pan. Place the chicken skin-side down, cover, and cook on medium-low heat for 5 minutes. Flip and cook until fully done.
