Main Ingredients
- 🥔 2 potatoes
- 🧅 1/2 onion
- 🧈 1 tbsp butter
- 🥛 1 cup milk
- 🧄 1/3 tbsp minced garlic
- 🧂 Salt to taste
- Pepper to taste
- A small amount of vegetable oil
Optional Ingredients
- 🍞 1 slice of bread
ÉTAPES
Dice 2 potatoes and place them in a microwave-safe container. Add 3 tbsp of water and 1 tsp of salt, then microwave on potato-cooking mode for about 8 minutes until tender.
Mash the cooked potatoes using a masher or the back of a ladle.
Thinly slice 1/2 onion.
Heat a pan with a small amount of vegetable oil, add the sliced onion, and sauté. Add 1 tbsp of butter and continue cooking until the onions are golden and caramelized.
In a blender, combine the mashed potatoes, caramelized onions, 1/3 tbsp minced garlic, and 1 cup of milk. Blend until smooth.
Transfer the blended mixture to a pot. Adjust the consistency by adding more milk, and season with salt and pepper to taste.
Optional: Cut 1 slice of bread into bite-sized cubes and toast in a dry pan to make croutons.
Serve the soup in a bowl, garnish with croutons and parsley, and enjoy!
