- 🐟 1 whole sea bream (300g)
ÉTAPES
Place the sea bream with its head to the left. Hold the head firmly with your left hand and use a scaler to remove the scales by moving from the tail to the head.
Use the knife blade to scrape off the remaining scales by sliding it from the tail to the head. Flip the fish and repeat on the other side. Rinse briefly with water.
Place the fish with the head to the right and the belly facing up. Open the gill cover and use the knife tip to cut the thin membrane connecting the gills and the head.
Make an incision at the lower jaw and extend it to the anus. Remove the gills and internal organs, cutting the connection between the intestines and the anus.
Open the belly and make a cut along the bloodline membrane near the central bone. Rinse thoroughly under running water and pat dry with kitchen paper.
