Main Ingredients
- 20g dried shirasu
- 🎃 200g pumpkin, thinly sliced
- 6 green beans, trimmed and cut
Batter
- 4 tbsp all-purpose flour
- 1 tbsp cornstarch
- 💧 4 tbsp water
Frying
- Enough salad oil for frying
Tempura Sauce
- 2g bonito flakes
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 2 tbsp soy sauce
- 💧 50cc water
ÉTAPES
Remove seeds and pulp from the pumpkin, then slice thinly. Trim and cut green beans into 4cm pieces.
Mix all tempura sauce ingredients in a microwave-safe container. Heat uncovered at 600W for 1.5 minutes until the alcohol evaporates. Stir until sugar dissolves, cool slightly, and strain through a sieve.
Combine flour, cornstarch, and water in a bowl. Add pumpkin, green beans, and dried shirasu, mixing gently.
Heat salad oil in a pot to 170°C. Scoop 1/8 of the batter onto a spatula and slide gently into the oil. Fry until crispy, flipping once, for about 2 minutes. Repeat for 8 pieces.
Serve the tempura on a plate with the tempura sauce on the side.
