INGRÉDIENTS
Main Ingredients
- 🧈 300g silken tofu
- 65g mizuna greens
- 100g enoki mushrooms
- 2 pickled plums
Broth
- 8cm dried kombu
- 💧 500ml water
Plum Sauce
- 2 tbsp concentrated soy sauce
- 1 tsp sesame oil
ÉTAPES
Place kombu and water in a pot and let it sit for 15 minutes.
Prepare the vegetables: cut mizuna into 3-4cm pieces, separate enoki mushrooms, and remove seeds from plums before finely chopping them. Cut tofu into quarters.
Mix chopped plums with soy sauce and sesame oil in a bowl to create the plum sauce.
Heat the pot with tofu over medium heat. Remove kombu just before boiling. Add mizuna and enoki, reduce to low heat, and simmer for 5 minutes.
Serve the plum sauce in a bowl and dilute with the hot pot broth to your desired taste.
