ÉTAPES
Rub salt thoroughly into the pork tenderloin and place it in a heat-resistant bag. Refrigerate for 12–24 hours.
Place the pork and boiling water into a rice cooker, ensuring the pork is fully submerged. Use a heat-resistant plate to keep the pork submerged and press the 'keep warm' button for 100 minutes.
Remove the pork from the rice cooker and let it cool to room temperature. Once cooled, refrigerate until chilled. Slice into 1cm thick pieces and serve with yuzu pepper as desired.
