INGRÉDIENTS
Fish
- 1 can saba (190g)
Dairy
- 1 large hanpen (120g)
Vegetables
- 🧅 1/4 onion (50g), minced
- 2cm daikon (60g), grated
- 2 shiso leaves, sliced
Condiments
- Ponzu soy sauce, as needed
Seasonings
- 1 tbsp sake
- 2 tsp potato starch
- 1/2 tsp grated ginger
- 🧂 Salt and pepper, a pinch
Oil
- 1 tbsp salad oil
ÉTAPES
Mince the onion, grate the daikon, and slice the shiso leaves.
Drain the saba can and flake the fish.
In a plastic bag, tear the hanpen into pieces. Add onion, saba, and seasonings (☆), then knead to combine. Shape into 4 patties.
Heat salad oil in a frying pan over medium heat. Cook the patties until browned on one side, then flip and cover. Steam on low heat for 3 minutes.
Plate the patties, top with grated daikon and shiso leaves, and drizzle with ponzu soy sauce.
