INGRÉDIENTS
Fish
- 🐟 2 fillets mackerel
Vegetables
- 1/2 piece ginger, sliced
- 🧅 1/2 stalk green onion, cut into 3cm pieces
- 1 small red chili
Seasoning
- 1 tbsp miso
- 1 tsp soy sauce
- 1 tbsp mirin
- 3 tbsp sake
- 🍬 1/2 tbsp sugar
- 💧 150 ml water
ÉTAPES
Wash the mackerel fillets, pat dry, and make shallow cuts on the skin. Place them on a strainer and pour hot water over them.
Slice the ginger thinly and cut the green onion into 3cm pieces.
In a frying pan, combine the seasoning ingredients (miso, soy sauce, mirin, sake, sugar, and water) and bring to a boil.
Once boiling, add the mackerel, ginger, green onion, and red chili. Cover with a drop lid and simmer over medium heat for 7–8 minutes.
Remove the drop lid and dissolve additional miso into the broth.
Spoon the broth over the mackerel, replace the drop lid, and simmer for another 7–8 minutes.
