Defrost the edamame and remove the beans from the pods. Tear the frilly lettuce into large pieces.

Crack the egg into a square microwave-safe container (8×8cm). Add the edamame and a pinch of salt and pepper, then mix. Microwave at 600W for 30 seconds, stir, and microwave for another 30 seconds.

Place the nori with a corner facing downwards. Spread half of the rice into a square shape on the nori. Layer the cooked egg mixture, salmon flakes, frilly lettuce, and mayonnaise on top. Add the remaining rice and fold the nori corners towards the center to wrap. Wrap with plastic wrap and let sit for 5 minutes before cutting in half.
