Fish
- 🐟 200g salmon fillets
Vegetables
- 🥬 150g cabbage
- 2 bell peppers (60g)
- 100g maitake mushrooms
- 100g shimeji mushrooms
Seasoning
- 🧂 Pinch of salt and pepper
- Small amount of salad oil
- 🧈 10g salted butter
Sauce
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp mirin
- 1.5 tbsp miso
- 🧄 1/2 tsp grated garlic
Garnish
- 🧅 Chopped green onion as needed
ÉTAPES
Season the salmon fillets with salt and pepper.
Prepare the vegetables: cut cabbage into bite-sized pieces, halve and deseed bell peppers, tear maitake mushrooms, and separate shimeji mushrooms into small clusters.
Mix the sauce ingredients (sake, sugar, mirin, miso, garlic) in a bowl.
Heat salad oil in a frying pan over medium heat, place salmon skin-side down, and cook until browned. Flip the salmon, then add cabbage, bell peppers, maitake, shimeji, sauce mixture, and butter. Cover and steam for 7 minutes.
Serve the dish on a plate and garnish with chopped green onions.
