Pat the salmon fillets dry with a paper towel. Season with salt and pepper, then coat with potato starch.

Rinse the nameko mushrooms and drain well. Peel and grate the daikon radish, then lightly squeeze out excess water.

Heat vegetable oil in a frying pan over medium heat. Place the salmon fillets in the pan and cook for 3–4 minutes on each side until golden brown. Remove excess oil with a paper towel.

Add the sauce ingredients (sake, mentsuyu, water, grated ginger), nameko mushrooms, and grated daikon to the pan. Bring to a boil, then simmer on low heat for 1–2 minutes.
