- 🥩 2 pounds pork belly
Vegetables
- 🥬 1/2 head kimchi
- 🧅 2 stalks green onion
- 1 red chili
- 2 green chilies
Broth
- 2 packs beef bone broth
Condiments
- 1 tbsp gochujang
ÉTAPES
Cut pork belly into smaller pieces and prepare kimchi leaves by trimming large ones and cutting them in half if necessary.
Place pork belly on kimchi leaves and roll tightly from the inside out.
Optionally, refrigerate the rolls overnight for better flavor infusion.
Arrange the rolls in a pot and pour one pack of beef bone broth over them.
Add sliced green onion, gochujang, and chopped chilies to the pot. Bring to a boil over high heat.
Cover the pot and simmer until the broth reduces and kimchi softens. Add the second pack of beef bone broth and repeat boiling.
Once the broth reduces again and the rolls are fully cooked, serve hot with freshly cooked rice.
