INGRÉDIENTS
Fish
- 🐟 2 filleted Pacific saury (180g)
Vegetables
- 6 shishito peppers
Powder
- 1 tbsp potato starch
Oil
- 1/2 tbsp salad oil
Seasoning
- 🍬 1 tbsp sugar
- 🍶 1 tbsp vinegar
- 🧂 1 tbsp soy sauce
- 1/2 tsp grated ginger
ÉTAPES
Trim the tops of the shishito peppers and make a vertical slit in each.
Pat the Pacific saury dry with paper towels and cut them in half horizontally. Lightly coat them with potato starch.
Mix the seasoning ingredients (sugar, vinegar, soy sauce, and grated ginger) in a bowl.
Heat salad oil in a frying pan over medium heat. Place the Pacific saury skin-side down and arrange the shishito peppers in the empty space. Cook the peppers until browned and remove them. Cook the saury for about 3 minutes until browned, then flip and cook for another 2 minutes.
Add the seasoning mixture to the pan and spoon the sauce over the saury while simmering to coat evenly.
Plate the Pacific saury and shishito peppers, and serve.
