- 4 tbsp sake
- 5 tbsp mirin
- 1/2 tbsp soy sauce
- 2 tbsp miso
ÉTAPES
Cut off the head and tail of the Pacific saury, then slice each into three pieces. Remove the innards, rinse with water, and pat dry.
In a pot, mix the seasonings (sake, mirin, soy sauce, and miso) and heat over medium heat until boiling. Add the Pacific saury and ginger slices, cover with a lid, and simmer on low heat for 10 minutes, flipping occasionally.
Remove the lid and simmer further until the sauce thickens to a glaze-like consistency.
