INGRÉDIENTS
Fish
- 🐟 1 filleted sanma fish
Grains
- 🍚 2 bowls warm rice (300g)
Herbs
- 5 shiso leaves
Spices
- 2 pieces ginger
- 🧂 Pinch of salt
Oils
- 1 tsp salad oil
Seeds
- 1 tbsp white sesame seeds
Seasoning
- 2 tbsp vinegar
- 🍬 1 tsp sugar
- 🧂 1/3 tsp salt
ÉTAPES
Slice shiso leaves and ginger thinly. Sprinkle salt on both sides of the sanma fish.
Heat a pan with salad oil spread thinly using a paper towel. Cook the sanma on low heat for 4 minutes on one side, then flip and cook for another 3 minutes.
Mix the sushi vinegar ingredients (vinegar, sugar, and salt) in a bowl.
In a separate bowl, add warm rice and pour the sushi vinegar mixture evenly. Mix by cutting through the rice. Add sesame seeds and shiso leaves, then mix again.
Place half of the sanma (skin side down) on plastic wrap, add half the ginger and rice, and shape into a roll. Repeat for the second roll. Chill in the refrigerator for 1 hour.
