INGRÉDIENTS
Fish
- 🐟 2 sardines, cleaned (180g)
Vegetables
- 4 shishito peppers (16g)
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp potato starch
- Pinch of white sesame seeds
Oil
- 1 tbsp salad oil
Ponzu Sauce
- 1 tbsp sake
- 1 tbsp ponzu soy sauce
- 1 tsp grated ginger
ÉTAPES
Make small cuts in the shishito peppers.
Pat the sardines dry, season with salt and pepper, and coat both sides with potato starch.
Mix all the ponzu sauce ingredients in a bowl.
Heat half the salad oil (1/2 tbsp) in a frying pan, add the shishito peppers, and stir-fry until tender. Remove from the pan.
In the same pan, heat the remaining salad oil (1/2 tbsp), place the sardines skin-side down, and cook over medium heat for 3-4 minutes until browned. Flip and cook the other side similarly.
Add the ponzu sauce to the pan and coat the sardines evenly. Plate the sardines, garnish with shishito peppers, and sprinkle with white sesame seeds.
