ÉTAPES
Cut the nori sheet horizontally into 4 equal strips.
Make a slit in the mentaiko skin and extract the roe.
Butterfly the chicken tenderloin by cutting it in the center and spreading it open. Cover with plastic wrap and pound to even thickness. Sprinkle sake over the chicken.
Place the chicken horizontally on plastic wrap. Add a strip of nori and spread 1/4 of the mentaiko evenly in the center. Roll tightly from the edge, ensuring no air pockets, and wrap firmly with plastic wrap. Repeat for all pieces.
Place the rolls seam-side down in a microwave-safe dish. Microwave at 600W for 3 minutes, then let rest for 2 minutes. Remove the plastic wrap and slice into bite-sized pieces.
