ÉTAPES
Trim the stems off the shiso leaves.
Make a cut in the center of the squid and open it. Remove the cartilage and guts, then wash the body thoroughly and pat dry.
Peel off the fin and remove the thin membrane. Cut the squid into two equal parts.
Slice the squid into thin strips, plate it, and serve with soy sauce, shiso leaves, and wasabi.
