Main
- 4 scallops (90g)
- 50g salmon sashimi
- 2 tsp olive oil
Avocado Tartare
- 🥑 1/2 avocado
- 🍋 1 tbsp lemon juice
- 1 tbsp mayonnaise
- 1 pickle
- 🧂 Pinch of salt and pepper
Garnish
- 🥖 2 slices of baguette
- 🧂 Pinch of rock salt
- Pinch of black pepper
- Drizzle of olive oil
ÉTAPES
Chop the scallops and salmon roughly.
Finely chop the pickle. Mash the avocado in a bowl and mix with lemon juice and mayonnaise. Add the pickle, salt, and pepper, and adjust the taste.
In a separate bowl, mix the scallops with 1 tsp olive oil.
In another bowl, mix the salmon with 1 tsp olive oil.
Lightly grease a ring mold with olive oil. Layer half of the avocado tartare, salmon, and scallops sequentially.
Remove the ring mold, garnish with a slice of baguette, sprinkle rock salt, and repeat for the second tartare. Optionally, add black pepper and drizzle olive oil.
