- 🦐 5 whole shrimp
- 5 slices of sashimi-grade squid
- 5 sashimi-grade scallops
Vegetables
- 1 pack (5 pieces) chikuwa
- 🍄 10 fresh mushrooms
- 🍅 10 cherry tomatoes
- 1/2 zucchini, peeled into ribbons
Broth
- 💧 5-6 cups water
- 1/2 cup white wine
- 🧂 1 tsp salt
- 🍋 3-4 slices of lemon
Negi Salt Sauce
- 🌱 15 stalks chopped green onion
- 3 tbsp sesame oil
- 🧂 1/2 tsp salt
- 1/2 tsp coarse black pepper
Sweet Chili Sauce
- 3 tbsp vinegar
- 1 tbsp sugar
- 1 tsp doubanjiang
- 🧂 1/2 tsp salt
Olive Lemon Sauce
- 2 tbsp extra virgin olive oil
- 🍋 1 tbsp lemon juice
- 🧂 1/2 tsp salt
- A pinch of pepper
ÉTAPES
Prepare the seafood by cleaning the shrimp, slicing the squid, and rinsing the scallops.
Cut the vegetables into appropriate sizes for skewering. Peel the zucchini into ribbons and roll them.
Assemble the skewers by alternating seafood and vegetables.
In a pot, combine water, white wine, salt, and lemon slices. Bring to a boil.
Cook the skewers in the boiling broth for 3-5 minutes until the seafood is cooked through.
Prepare the sauces: mix ingredients for Negi Salt Sauce, Sweet Chili Sauce, and Olive Lemon Sauce in separate bowls.
Serve the skewers hot with the three dipping sauces on the side.
