Cockles
- 1 kg cockles
- 🧂 A pinch of coarse salt
Seasoning Sauce
- 1/2 tbsp red pepper powder
- 3 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1/2 tbsp ginger juice
- 🍬 1/2 tsp sugar
- 🧄 1/2 tsp minced garlic
- 1/2 tbsp minced red chili
- 1 tbsp minced chives
- 🧅 1 tbsp minced onion
- A pinch of sesame seeds
ÉTAPES
Rinse the cockles under running water with coarse salt, scrubbing to remove debris. Rub cockles against each other for better cleaning.
Boil the cockles in salted water, stirring in one direction to make the meat settle on one side of the shell. Remove when the shells start to open.
Remove one side of the shell from 2/3 of the cockles. For the remaining 1/3, extract the meat for other dishes like soup.
Mix the seasoning sauce ingredients: red pepper powder, soy sauce, sesame oil, ginger juice, sugar, minced garlic, minced red chili, minced chives, minced onion, and sesame seeds.
Top the cockles with the seasoning sauce or mix the cockle meat with the sauce for a marinated dish.
Enjoy the seasoned cockles directly from the shell or as a mixed dish.
