Trim the root of the shimeji mushrooms and separate them. Crack the egg into a bowl and beat it.

Heat salad oil in a frying pan over medium heat. Add shimeji mushrooms and canned tuna, stir-frying for 2–3 minutes. Push the ingredients to one side of the pan.

Pour the beaten egg into the pan and stir gently until semi-cooked. Add the seasoning ingredients (mirin, soy sauce, dashi powder) and mix well. Garnish with chopped green onion.
