INGRÉDIENTS
Main Ingredients
- 30g shirasu (whitebait)
- 3 taro roots
- 🧅 1/4 onion, finely chopped
- Chopped green onion, a small amount
- 🧂 Salt, to taste
Seasonings
- 2 tbsp mayonnaise
- 1 tbsp mentsuyu (2x concentrated)
- 1 tbsp white sesame seeds
ÉTAPES
Finely chop the onion against the grain, soak in water for 5 minutes, then drain.
Peel the taro roots thickly, cut into bite-sized pieces, and place in a bowl. Sprinkle with salt, rub to remove the sliminess, rinse with water, and drain.
Place the taro in a pot, add enough water to cover, and bring to a boil. Reduce to low heat and simmer for 10 minutes until a skewer can pass through. Drain and rinse the taro under running water.
Place the taro in a bowl and mash with a fork.
Add the seasonings (mayonnaise, mentsuyu, sesame seeds) and onion to the mashed taro and mix well.
Add the shirasu and mix gently. Serve on a plate and garnish with chopped green onion.
