INGRÉDIENTS
Wrapper
- 10 large dumpling wrappers
Soup
- 1 tsp Japanese dashi powder
- 3g powdered gelatin
- 50cc hot water
Filling
- 100g ground pork
- 10 shiso leaves, minced
- 1 tsp sake
- 1 tsp soy sauce
- 1 tsp sesame oil
- Pinch of salt and pepper
ÉTAPES
Mix dashi powder, gelatin, and hot water in a heatproof container. Let cool and refrigerate until solidified.
Trim the stems from the shiso leaves and mince them finely.
In a bowl, combine ground pork, minced shiso, sake, soy sauce, sesame oil, salt, pepper, and the solidified soup mixture. Knead until sticky.
Place 1/10 of the filling onto each dumpling wrapper. Wet the edges with water and fold into pleats to seal. Repeat for all wrappers.
Boil water in a pot and line a steamer with cooking paper. Place the dumplings in the steamer, cover, and steam over medium heat for 6 minutes.
