- 2 tbsp mayonnaise
- 1 tbsp ketchup

- 🥚 1 egg white
- 🧂 1/4 tsp salt
- 1 tbsp all-purpose flour
- 1 tbsp cornstarch
ÉTAPES
Defrost the shrimp, pat dry, and remove the vein if present. Sprinkle evenly with salt, pepper, and cornstarch.
Cut the avocado in half, remove the pit and skin, and slice into shrimp-sized pieces. Sprinkle with cornstarch.
In a bowl, whisk egg white and salt until foamy. Add flour and cornstarch, then mix to form a batter.
Heat salad oil in a pot to 180°C (356°F). Coat shrimp in the batter and fry for about 1 minute. Repeat with avocado.
Mix mayonnaise, ketchup, and egg yolk in a bowl. Toss the fried shrimp and avocado in the sauce.
Plate the dish and garnish with Italian parsley.
