Vegetables
- 150g boiled bamboo shoots
- 250g daikon radish
- 4 shiitake mushrooms
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1/3 tsp salt
- 1/2 tbsp soy sauce
- 1/3 tsp Japanese dashi powder
- 💧 200ml water
ÉTAPES
Cut the bamboo shoots into quarters lengthwise for the tips and into 1cm slices for the base. Peel and quarter the daikon radish into 1cm slices. Remove the stems from the shiitake mushrooms, slice the caps into quarters, and shred the stems by hand.
Place daikon, bamboo shoots, shiitake mushrooms, sake, mirin, sugar, dashi powder, and water into a pan. Heat over medium heat until boiling, then cover and simmer on low heat for 10 minutes.
Add salt and soy sauce, mix well, and bring to a boil again. Cover and simmer on low heat for another 5 minutes.
