Meat
- 🥩 300g beef shank
Vegetables
- 🥔 10cm (300g) daikon radish
Spices
- Pinch of black pepper
Seasonings
- 50cc sake
- 2 slices ginger
- 🧂 2/3 tsp salt
- 💧 600cc water
ÉTAPES
Peel the daikon radish thickly, cut it lengthwise in half, and slice into 2cm thick pieces. Trim the edges slightly for rounding.
In a pot, add beef shank and enough water to cover. Heat over medium-high until boiling, skim off scum, and simmer for 5 minutes. Remove beef, rinse under running water, and cut into bite-sized pieces. Clean the pot lightly, return the beef, and add the seasonings (☆). Cover and simmer on low heat for 1 hour.
In a separate pot, add daikon radish and enough water to cover. Bring to a boil, then simmer on low heat for 10 minutes. Remove and rinse under running water. Add the daikon to the beef pot and simmer on low heat for 15 minutes.
Serve in a bowl and sprinkle with black pepper.
