ÉTAPES
Wash the black soybeans thoroughly and drain the water.
In an iron pot, combine sugar, soy sauce, and water (half the pot's volume). Bring to a boil over medium heat.
Add the black soybeans to the pot, turn off the heat, and let them soak overnight.
Heat the pot again, bring it to a boil, and skim off any scum. Place a drop lid (otoshibuta) on top and cover with the pot lid.
Simmer on very low heat for 3–6 hours until the beans are tender enough to be crushed with chopsticks.
