INGRÉDIENTS
Main Ingredients
- 🍗 250g chicken thigh
- 🥬 400g daikon, sliced
- 4 slices ginger
- 1/2 tbsp salad oil
Broth
- 💧 200ml water
- 1/2 tsp dashi powder
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 2 tbsp soy sauce
ÉTAPES
Slice the daikon into 2cm thick half-moon pieces and peel the skin.
Cut the chicken thigh into large bite-sized pieces.
Heat salad oil in a pot over medium heat and place the chicken skin-side down. Cook until browned, then flip and cook the other side.
Add daikon, water, dashi powder, and sake to the pot. Bring to a boil and skim off any foam.
Add ginger, mirin, and sugar. Once boiling again, cover with a lid and simmer on low heat for 10 minutes.
Add soy sauce, cover, and continue simmering on low heat for another 5-10 minutes until the daikon is tender.
Remove the lid and simmer over medium heat until the broth reduces to about 1/3 of its original volume.
