Cut the daikon into quarters lengthwise, then slice into 1cm thick pieces. Trim the root of the shimeji mushrooms and separate them.

Slice the pork loin into 2cm wide pieces. Season with salt and pepper, then coat with potato starch.

Heat salad oil in a pot over medium heat. Add the pork and cook until both sides are browned.

Add the daikon and shimeji mushrooms to the pot. Stir until the mushrooms are coated with oil. Add the seasoning ingredients (sake, sugar, soy sauce, yuzu pepper, and water), mix well, and bring to a boil. Cover and simmer on low heat for about 10 minutes until the pork is cooked through.
