ÉTAPES
Peel the daikon radish thickly and cut into 1–2 cm thick rounds. Trim the edges and make shallow cuts on the surface.
Place the daikon, rice, and enough water to cover in a pot. Bring to a boil, then simmer over medium-low heat for about 30 minutes until the daikon is tender. Rinse and drain.
Add the daikon, seasonings (sake, mirin, sugar, soy sauce, water), and sakura shrimp to the pot. Bring to a boil, cover with a drop lid, and simmer over medium-low heat for 5–6 minutes until the broth reduces by half.
