INGRÉDIENTS
Main
- 🐟 2 medium horse mackerels (130g each)
- 1 slice of ginger
- 🍄 50g shimeji mushrooms
- 1/3 bag of mizuna, cut into 4cm pieces
Seasoning
- 🍵 300ml cooled green tea
- 1/2 tbsp sake
- 🧂 1/2 tbsp sugar
- 1/2 tbsp mirin
- 🧂 1 1/2 tbsp soy sauce
ÉTAPES
Prepare the horse mackerel by cleaning and removing scales and guts.
Slice the ginger thinly and separate the shimeji mushrooms into small clusters.
Cut the mizuna into 4cm pieces and set aside.
In a pot, combine green tea, sake, sugar, mirin, and soy sauce.
Place the horse mackerel into the pot with the seasoning mixture and bring to a gentle simmer over low heat.
Add ginger slices and shimeji mushrooms to the pot and continue simmering for 20 minutes.
Add mizuna to the pot in the last 5 minutes of cooking.
Serve the fish and vegetables with the broth in a deep dish.
