Vegetables
- 200g komatsuna (Japanese mustard spinach)
Protein
- 1 piece (50g) aburaage (fried tofu)
Seasoning
- 1 1/2 tbsp white dashi

ÉTAPES
Trim the roots of the komatsuna. Wash the komatsuna thoroughly by soaking the roots in a bowl of water and shaking gently. Cut into 4cm pieces.
Pat the aburaage with a paper towel to remove excess oil. Cut it in half along the shorter side, then slice into 1cm wide strips along the longer side.
In a frying pan, combine white dashi and water. Heat over medium heat until it begins to boil. Add the aburaage and komatsuna in sequence. Cover with a lid and cook for 1 minute. Remove the lid, stir, and simmer until the komatsuna becomes tender.
