INGRÉDIENTS
Fish
- 🐟 2 fillets (160g) mackerel
Vegetables
- 1 piece ginger, thinly sliced
- 🧅 2 stalks spring onion, cut into 5cm pieces
Sauce
- 💧 100cc water
- 🧂 50cc soy sauce
- 1 tbsp mirin
- 🍬 1 tbsp sugar
ÉTAPES
Thinly slice the ginger. Cut the spring onion into 5cm pieces. Make cross cuts on the mackerel fillets.
In a pot, combine water, soy sauce, mirin, and sugar. Heat over medium heat until it starts to boil. Add the mackerel and ginger, and spoon the sauce over the fish.
Place a drop lid (otoshibuta) on top, cover the pot, and simmer on low heat until the sauce reduces to less than half.
Remove the lid and drop lid. Spoon the sauce over the fish while simmering for another 5 minutes. Add the spring onion and cook briefly.
