    • 125g konjac
    • 150g lotus root
    • 🥕 75g carrot

    • 1 tbsp sake
    • 2 tbsp mirin
    • 🧂 1 tbsp sugar
    • 1.5 tbsp soy sauce
    • 200cc shiitake soaking liquid

Rehydrate dried shiitake mushrooms in hot water, squeeze out excess moisture, and cut into 1cm cubes. Reserve 200cc of the soaking liquid.

Tear konjac into 1cm pieces using a spoon. Rub with 1 tbsp sugar until water is released, then drain. Cut lotus root into 1.5cm cubes and soak in water to remove excess starch. Cut carrot into 1cm cubes.

In a pot, mix all seasonings (sake, mirin, sugar, soy sauce, shiitake soaking liquid). Add soybeans, shiitake, konjac, and carrot. Bring to a boil, cover, and simmer on low heat for 7 minutes. Add lotus root, stir, and simmer for another 5 minutes. Remove the lid and cook over medium heat, stirring until the liquid reduces.
