- 🐟 2 whole Pacific saury
Vegetables
- 2 pieces of ginger, julienned
Seasoning
- 💧 100cc water
- 3 tbsp soy sauce
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 2 tsp sugar
ÉTAPES
Cut off the head and tail of the Pacific saury, then slice into 4 equal pieces. Remove the innards using chopsticks, rinse with water, and pat dry. Julienne the ginger.
In a pot, combine water, soy sauce, sake, mirin, and sugar. Heat over medium heat until boiling, then add the saury and ginger.
Place a drop lid and cover the pot. Simmer on low heat for about 15 minutes. Remove the drop lid and spoon the simmering sauce over the saury until the sauce reduces.
