Meat
- 🐖 150g thinly sliced pork belly
Vegetables
- 🥕 10cm (300g) daikon, thinly sliced
- 1 pack (250g) pea shoots
- 1 piece ginger, julienned
Liquid
- 💧 200cc water
- 2.5 tbsp shiro dashi
ÉTAPES
Cut the daikon into quarters lengthwise and slice thinly using a peeler. Trim the roots of the pea shoots and cut them in half. Julienne the ginger.
Cut the pork into bite-sized pieces.
In a pot, bring water to a boil and add the pork. Skim off any scum that rises to the surface. Add the ginger and shiro dashi, stir lightly, cover, and simmer for 5 minutes.
Add the daikon to the pot, stir, cover again, and simmer over medium heat for another 5 minutes.
Push the pork and daikon to one side of the pot, add the pea shoots, and cook until wilted.
