Vegetables
- 🎃 180g pumpkin, diced
- 8 shishito peppers, sliced
- 🧅 1/2 stalk green onion, minced
- 1/2 piece ginger, minced
Meat
- 150g minced pork
Oil
- 1 tbsp salad oil
Seasonings
- 🧂 2 tsp sugar
- 1.5 tbsp sake
- 1.5 tbsp mirin
- 2 tbsp miso
- 💧 100ml water
- a pinch of dashi powder
ÉTAPES
Dice the pumpkin, slice the shishito peppers, and mince the green onion and ginger.
Heat salad oil in a pan over low heat, add minced green onion and ginger, and sauté until fragrant. Add minced pork and stir until the pork changes color. Then, add the diced pumpkin and stir over medium heat.
Once the oil coats the ingredients, add the seasoning mixture (sugar, sake, mirin, miso, water, and dashi powder). Cover the pan and simmer for about 10 minutes.
Add the sliced shishito peppers, remove the lid, and simmer for another 3 minutes while stirring.
