Clean the spear squid: remove the innards and cartilage, cut the tentacles below the eyes, and remove the beak and suckers. Rinse thoroughly. Slice the body into 3cm rings and cut the tentacles into bite-sized pieces.

In a pot, combine all the seasonings (sake, mirin, sugar, soy sauce, water) and ginger. Bring to a boil over medium heat, then add the squid. Stir gently.

Once boiling, cover the pot and simmer over low heat for about 5 minutes until the squid is cooked through.
