INGRÉDIENTS
Seafood
- 🦑 250g squid
Vegetables
- 🥬 1/4 daikon radish
- 6 snow peas
- 1 piece ginger

- 💧 300cc water
Seasonings
- 1/2 tsp dashi powder
- 🧂 2 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
ÉTAPES
Clean the squid by removing the internal organs and washing the body. Drain the water.
Remove the cartilage, peel off the fins, and skin the squid.
Cut below the eyes, remove the beak, and divide the tentacles into two portions.
Slice the squid body into 3cm wide pieces.
Remove the strings from the snow peas, boil for 1 minute, and cool in cold water.
Julienne the ginger and cut the daikon radish into half-moon slices.
In a pot, combine water, dashi powder, soy sauce, brown sugar, mirin, and sake. Add the daikon and simmer for about 20 minutes until tender.
Once the daikon is tender, add the squid and cook until it is fully cooked.
