- 🍠 1 sweet potato (180g)

- 10g dried shredded kombu

- 1 tbsp mirin
- 🍬 1 tbsp sugar
- 1/2 tsp Japanese dashi granules
- 💧 150ml water
ÉTAPES
Cut the sweet potato into 1.5cm slices and soak in water to remove excess starch. Drain the water. Rehydrate the dried shredded kombu according to package instructions and cut into bite-sized pieces.
In a pot, combine all the seasoning ingredients (sake, mirin, sugar, dashi granules, and water) and heat over medium heat. Add the sweet potato and kombu, cover with a lid, and simmer on low heat for about 8 minutes.
Add soy sauce to the pot and simmer for an additional 3–5 minutes until the flavors are absorbed.
